Apricot Pie – Grammy’s Recipe
Katie's favorite pie
Ingredients
- 4 C. Apricots pitted and sliced
- 1 1/4 C. Sugar
- 1/2 C. Flour
- 1/2 tsp. Almond Extract
- 1/2 tsp. Allspice or ginger
- 1/8 tsp. Nutmeg
Instructions
- Toss together: apricots, sugar and flour.
- Add and mix in: almond extract and spices.
- Put in unbaked pie shell. Top with pastry or crumb topping.
- Lightly cover edge crust with strips of foil.
- Bake at 375°F. 25 minutes; remove foil and bake an additional 20-25 minutes till golden brown.
- Serve with vanilla ice cream or cream.
