Katie's favorite pie
Ingredients

C.
Apricots
pitted and sliced
1 1/4
C.
Sugar
1/2
C.
Flour
1/2
tsp.
Almond Extract
1/2
tsp.
Allspice
or ginger
1/8
tsp.
Nutmeg
Instructions
Toss together: apricots, sugar and flour.
Add and mix in: almond extract and spices.
Put in unbaked pie shell. Top with pastry or crumb topping.
Lightly cover edge crust with strips of foil.
Bake at 375°F. 25 minutes; remove foil and bake an additional 20-25 minutes till golden brown.
Serve with vanilla ice cream or cream.
