Apricot Pie – Grammy’s Recipe

Katie's favorite pie

Ingredients
  

  • 4 C. Apricots pitted and sliced
  • 1 1/4 C. Sugar
  • 1/2 C. Flour
  • 1/2 tsp. Almond Extract
  • 1/2 tsp. Allspice or ginger
  • 1/8 tsp. Nutmeg

Instructions
 

  • Toss together: apricots, sugar and flour.
  • Add and mix in: almond extract and spices.
  • Put in unbaked pie shell. Top with pastry or crumb topping.
  • Lightly cover edge crust with strips of foil.
  • Bake at 375°F. 25 minutes; remove foil and bake an additional 20-25 minutes till golden brown.
  • Serve with vanilla ice cream or cream.
