Raised Doughnuts – Mrs. Granger’s Famous Doughnuts
Ingredients
Doughnut dough:
- 1 C. Milk scalded and cooled
- 4 Tbsp. Sugar
- 1/4 C. Oil
- 2 packages Yeast, dissolved in 1/2 C. Warm Water about 4 1/2 tsp.
- 3 C. Four
- 1 tsp. Salt
- 1 tsp. Nutmeg or 1/4 tsp. mace
- 1 Egg beaten – at room temperature
- Canola oil for frying – or preferred frying oil
Maple Bar Icing:
- 1 lb. Powdered Sugar about 4 1/2 c.
- 1 1/2 tsp. Light Corn Syrup
- 1/4 tsp. Salt
- 1/4 tsp. Vanilla Extract
- 1-2 tsp. Maple Extract
- 1/3+ C. Hot water
- Mix all together.
Simple Vanilla Glaze:
- 1 1/2 tsp. Light corn/golden syrup
- 1/4 tsp. Iodized Salt
- 1/2 tsp. Vanilla Extract
- 1/2 C. Hot Water plus more if needed
- 2 C. Powdered Sugar
- Mix together and set aside.
Instructions
- Stir all ingredients together.
- Cover. Let rest a couple of hours, or until about doubled in size.
- Turn out onto floured board, and move the dough around with a spatula, adding flour until it's manageable to roll out.
- Cut doughnuts to thickness desired.
- Let raise/rest for "awhile" (until about half again as large)
- Fry in hot oil, 375°F until golden brown, flipping half way through to brown on both sides.
- Makes approx. 18 doughnuts or 12 maple bars.
Notes
Have all ingredients at about 70° F. (room temp) so the dough can be mixed quickly to prevent the development of extra gluten in the flour, which would tend to toughen the batter.
