- 1 Baked 10” Pie Shell cooled
Coat baked shell with a very thin layer of chocolate & it will resist getting soggy
Filling:
- 2 1/4 C. Sugar
- 2 1/4 C. Water
- 3/4 tsp. Salt
- 3/4 C. Cornstarch
- 1/2 C. Water
- 6 Egg Yolks slightly beaten (I omit these)
- 1/2 C. Lemon Juice
- 4 1/2 Tbsp. Butter
- 1 1/2 tsp. Lemon Zest Grated
- 2-3 drops Lemon Yellow Food Coloring
Traditional Meringue:
- 1/2 tsp. Salt
- 6 Egg Whites
- 3/4 C. Sugar
