Cheesy Vegetable Chowder

Ingredients
  

Base Soup

  • 1/2 C. Onion - Chopped
  • 1 Clove Garlic - minced
  • 1 C. Celery - chopped
  • 3/4 C. Carrots - diced (optional)
  • 1 C. Potatoes - cubed
  • 3 1/2 C. Chicken Broth
  • 1/2 Can RoTel Tomatoes with Green Chilies about 1/4-1/2 c.
  • 1 C. Zucchini - chopped
  • 1 Can Whole Kernel Corn or 1 C. Frozen Corn
  • 1 Can Green Beans
  • Peas optional

White Sauce

  • 1/4 C. Butter
  • 1/4 C. Flour
  • 2 C. Milk
  • 1 Tbsp. Prepared Mustard
  • 2 C. Cheddar Cheese - grated
  • dash Paprika
  • 2 Tbsp. Pimento optional

Instructions
 

  • Combine and bring to a boil: onion, garlic, celery, carrots, potatoes, chicken broth, tomatoes and zucchini.
  • Cover, reduce heat and simmer 20 minutes.
  • Add remaining ingredients.
  • In a separate pan, make a white sauce.
  • Stir sauce into soup and heat thoroughly.
