Kerstin's Taco Salad
Yum, Yum, Yum!
Ingredients
Corn Salsa:
- Yellow Corn
- Fresh Lime Juice to taste
- Salt to taste
- Pepper to taste
- Fresh Jalapeños chopped finely - to taste
- Fresh Garlic minced - to taste
- Green Onions finely chopped - to taste
- Sliced Olives optional
- Mix together and let set to meld flavors.
For Salad
- Black Beans heated with Dried Onion, Taco Seasoning, Cumin, Salt and Pepper
- Chicken Thighs cut in strips or cubes, fried with Salt and Pepper till crispy.
- Cilantro-Rice Mix add fresh, chopped cilantro and lime zest to cooked rice
- additional Fresh Cilantro chopped
- Sharp Cheddar Cheese shredded
- Tomatoes chopped in large pieces
- Romaine Lettuce chopped
- Avocados cubed
- Doritos or other Tortilla Chips crushed
- Sour Cream or Uncle Dan’s Ranch Dressing or other Dressing
- Corn Salsa above
