Roasted Red Pepper and Goat Cheese Alfredo - Katie's Recipe

Ingredients
  

  • 2 Whole Red Bell Peppers
  • 2 Tbsp Olive Oil
  • 1 Small Onion Small
  • 1 C. Half and Half
  • 4 oz. Garlic and Herb Goat Cheese
  • 2/3 C. Parmesan Reggiano Grated
  • 1/2 C. Artichoke Hearts cut in 1/2” pieces - optional
  • 1/2 Lb. Linguine cooked al dente
  • Salt and Pepper to taste

Instructions
 

  • Mix everything (other than pasta) together in a large pan and heat through.
  • Once hot toss in pasta and mix to coat pasta completely.
