Cream together: butter, sugar and brown sugar until light in color and fluffy.
Then add: eggs, vanilla extract, salt and baking soda.
Mix to combine.
Add flour slowly, 2 cups at a time.
When you have a constant dough, add the chocolate chips and nuts (if nuts are desired).
Form into balls using a small cookie/ice cream scoop. place balls on a wax paper lined cookie sheet and freeze. Once cookie dough balls are frozen hard, removed and place balls in a gallon Ziploc freezer bags.
Store in the freezer to bake as desired, allowing a bit more baking time if not thawed.
Bake at 350°F. for 10-12 minutes until set but do not over bake.
We enjoy putting one cookie ball in a ramekin, baking it and, while still hot from the oven, topping it with a scoop of vanilla ice cream, to be eaten immediately.
May also be made into bar cookies.
Spread an even layer of dough into a greased and lined baking dish. Bake at 300°F. until set in the middle.
