Banana Wedding Cake
Jean & Ken's Wedding Cake 1977 - It's wonderful how food can take you right back to a specific moment in time.
- 2 C. Ripe Bananas Mashed
- 2 C. Sugar
- 1 C. Oil
- 2 Eggs beaten
- 1 tsp. Vanilla Extract I like vanilla, so often use more
- 3 C. Flour sifted
- 1 tsp. Ground Nutmeg
- 2 tsp. Baking Soda
- 2 tbsp. Hot Water
- 1 C. Walnuts chopped - optional
Cream Cheese Frosting:
- 1 Tbsp. Butter
- 3 Tbsp. Canned or Whole Milk
- 8 oz. Cream Cheese softened
- 1 tsp. Vanilla Extract
- 1 Lb. Powdered Sugar Approximately 1lb to make consistency right
Mix together well until smooth.
Beat oil and sugar well; add eggs and vanilla.
Mix nutmeg and flour together; add to oil and sugar mixture, alternating with the soda dissolved in the hot water.
Mix well.
Stir in bananas and nuts (if using), till well-mixed.
Bake in greased and floured pans @ 350° F.
Tube pan = 1 hr.
2 loaf pans = 35-45"
9"x12" pan = 35-45"
Cover cake pans with damp cloths around sides to keep the cakes tops flatter.
Cool in pans about 10 min, then turn onto racks and keep lightly covered until cooled completely.
Frost with Cream Cheese Frosting and then, especially, Enjoy!!
