Ingredients
Curd:

Butter

C. + 2 Tbsp.
Flour
- divided

Powdered Sugar
+ more for glaze

Baking Powder

Lemon Juice
+ more for glaze

Crust:
1/2
C.
Butter
1
C.
Flour
1/4
C.
Powdered Sugar
Instructions
Crust:
Mix: flour, butter and powdered sugar together with pastry knife. Should be lumpy like pie crust.
Press into a lined 8x8” pan and bake at 350°F for 15 minutes till light brown.
Do not over bake.
Filling:
Combine the: 1 C. Sugar, 1/2 tsp. Baking Powder, 2 Tbsp. Flour.
Mix well.
Add 2 Eggs, Lightly beaten - mix until just blended.
Add 3 Tbsp. Lemon Juice and zest of 1 Lemon
Add to mix and pour over Hot crust.
Bake 20 minutes until edges are light brown. Loosen edges or bars while they’re still warm by running a sharp knife around the edges.
To make Glaze combine:
Powdered Sugar, Lemon Juice and Butter.
Mix well, until smooth.
Drizzle over warm bars.
Notes
Can skip the glaze and top lemon curd bars with powdered sugar.
