Vermont Pancakes ~ Inn at Weston
Makes about 20 4” pancakes to serve 5-6 people.
- 1 C. Whole Wheat Flour
- 1/2 C. Rye Flour
- 1/2 C. Cornmeal
- 2 tsp. Baking Soda
- 1/2 tsp. Salt
- 2 Eggs
- 2 C. Milk
- 2 Tbsp. Sour Cream
- 2 Tbsp. Butter melted
Mix dry ingredients together in one bowl.
In another bowl, mix liquid ingredients together well, then gently fold the two mixes together.
Makes about 20 (4”) pancakes to serve 5-6.
Serve piping hot with butter and maple syrup.
