Yellow Cornmeal
Instructions
Bring 4 C. of water to a boil; add the salt.
Measure the 1 1/2 C. of cornmeal into a larger measuring container and stir while adding cold water to make 2 cups of cornmeal-water slurry.
Pour this slurry gradually into the boiling, salted water, stirring well until this mix is smooth.
Reduce heat to simmer and cook, stirring, till thickened.
Cover and turn heat off; let set for about 5 minutes.
