Vegetarian Eggs Benedict
There's nothing like breaking into that soft warm egg yolk and watching it cascade over the muffin and veggies.
- 1 English Muffin
- Tomatos Sliced
- 2 Eggs Poached or fried
- Asparagus Braised and well seasoned
- Hollandaise Sauce
- Avocado ~ Sliced Optional
Toast English Muffins.
Poach Eggs in a shallow pot filled with water. Or fry eggs if desired. (we like to make soft set scrambled eggs if we're in a rush)
Cook asparagus in a frying pan or on a BBQ. season with salt and pepper and zesty garlic seasoning mix.
Make hollandaise sauce from scratch or from package. (we use the packets that have you add milk and butter)
Assemble Eggs Benedict. Lay english muffin on a plate. Top each half with a slice of tomato, some asparagus and an egg. Top with hollandaise sauce.
Serve immediately and warm.
