Kerstin's Sopapillas
“Our family's favorite Mexican inspired dessert.”
- 1¾ C. Flour
- 2 tsp. Baking Powder
- 1 tsp. Salt
- 1 Tbsp. Sugar
- 2 Tbsp. Shortening
- ⅔ C. Milk
- Cinnamon sugar
- Honey
In a mixing bowl, combine: Flour, baking powder, salt and sugar.
Then, Cut in: Shortening and milk.
Mix only till dough hangs together in a ball.
Turn out onto floured surface and knead gently about 1 minute; cover dough and let rest 1 hour.
Roll out to 1/16”-1/8” thick; cut into squares or desired shapes.
Fry in oil heated to 370-380°F. until puffed and golden.
Serve hot with honey or cinnamon sugar.
