Peel sweet potatoes, slice in 3/4” rounds
Put in steamer basket and steam until a sharp knife pierces them easily.
Remove from heat, transfer to buttered baking pan, keeping slices as intact as possible.
In another saucepan, melt butter, add brown sugar and boil until sugar dissolves, stirring often.
Add a bit of heavy cream and some maple flavoring.
Sprinkle the potatoes with salt and pepper and gently pour the sauce over them.
Bake at 375 degrees, basting the sauce over the potatoes for a while, until they are bubbly and the sauce has been absorbed a bit.
