2lbs.Sweet Potatoes or Yamsabout 2 large or 3 medium, peeled, quartered length-wise and cut crosswise in 1/4” thick slices
4Tbsp.Unsalted Butter
2Tbsp.Heavy Cream
1/2tsp.Salt
1tsp.Sugar or 1 1/2 Tbsp Brown Sugar
1Pinchfreshly ground Black Pepper
2tsp.minced fresh Gingeroptional
Instructions
Combine all ingredients together in a 3-4 quart saucepan or frying pan. Cover and cook over low heat, stirring occasionally, until potatoes fall apart, 35-45 minutes.
Remove from heat.
Mash the potatoes with a potato masher and serve immediately.
